Ingredients 

  • 250g frozen mix banana & blueberry
  • 200g almond flour
  • 1 cup desiccated coconut
  • 1 1/2 tsp baking powder
  • 4 eggs (grade A)
  • sliced almonds 

Method

  1. Whisk the eggs until foamy. Add almond flour, desiccated coconut, baking powder and frozen mix banana & blueberries; mix until well combined.
  2. Grease the loaf pan with oil, pour in the batter and smooth the surface. Sprinkle sliced almonds over the batter and cover the pan with foil.
  3. Transfer the loaf pan into the Buffalo Pro Chef Plus and select the “Bake” function; bake it at 160 degrees for 50 minutes.
